Food Safety and Hygiene are the fundamental of F&B operations and productions. This course is not the Food Hygiene Cert under WSQ. We instead focus on practical and deep insights on Food Safety and Food Hygiene set up, operations, and maintenance to ensure that learners and F&B owners understands the importance, the know-how, and to be able to develop mitigations as well as SOPs in the F&B operations to prevent any Food Poisoning and Hazzards.

Preparing Stocks (Intermediate)
Stocks are fundamentals in flavouring delicious meals. Be it from vegetables based or event to meat based. This course will focus on how to make basic food stocks from chopping, simmering, filtering, and drying the stocks to be used in future cookings. Learners also will be taught on how to use leftovers to practice zero waste to be turned into stocks such as prawn heads, chicken bones, fish bones, and so on.
In this module, we will cover the fundamentals and basic science of stock making. From here, there will be 3 hours practical to make 3 basic stocks from mirepoix, chicken stocks, and seafood stocks.
